Garden Recipe: Tomato Pie

Yummy. Yummy. Yummy.

You'll want to make this. It's easy peasy.

Gather the ingredients:

Refrigerated Pie Crust
Tomatos- 3 to 4 medium sized
Fresh Basil- 3-4 leaves
Dijon Mustard- 2 Tablespoons
Shredded Swiss Cheese- 6oz
Salt & Pepper

Line a pie dish with a ready-made pie crust. {I figure I don't have to make one b/c Pillsbury already has.}

Spead the mustard evenly all over the pie crust.

Next put the swiss cheese, then a layer of tomatos.

Top with chopped fresh basil, salt, & pepper.

Bake at 350 for 30min or until crust is golden and cheese is melted.

I served tonight with BBQ ribs.

We enjoyed the {much needed} rain this weekend. It was a nice excuse to run errands, get house projects done, slurp down sbux, watch movies {worst chick flick= He's Just Not That Into You}, cook & clean. Hunkaroonie made a headboard out of an old 6 panel door- he.did.an.awesome.job. It's pretty fabulous. Don't get your panties in a bunch, I've got pictures to share. That's for another post.

We also got to spend time with family. We hosted a BBQ for our cousins who were passing through town. So fun to have them over to our house and visit. Mom & Dad Martini came by this morning and we got to catch up on the week.

I wish the sun would have shined but it was a productive weekend. Those are nice too.

Now go try that recipe. {It tastes better than it sounds. Hunkaroonie tested. And approved.}
