It feels like Fall has set in here. But it's not here to stay so I'm refraining myself from acting like it is. I'll be here soon enough. And I'm excited about that! You know it's my favorite season, right Crystal!?!
While you have all your fresh veggies from your garden, I wanted to share our favorite go-to summertime salsa. It's addictingly delicious.
5-6 large tomatos, seeded & diced
1/2 large red onion, diced
2 cups sweet corn
1 giant handful cilantro, chopped
1 can black beans, drained & rinsed
3 limes, for juice
What to do:
Throw the seeded & diced tomatos in a bowl. Add the diced red onion. The sweet corn. The drained & rinsed beans. And the chopped cilantro. Mix together. Then add the juice of the limes and salt & pepper to taste.
We enjoyed a lazy weekend at home. Went out for bloody mary's & golf. Made cheeseburgers and enjoyed a fire on the deck. Last night we went to my parent's for dinner & ended the evening at a yogurt bar. Oh my. You should have seen the mounds of Oreos Hunkaroonie had on his. As for me. I stuck with the fruit. It was so refreshing.
