Dinner Recipe: Italian Sausage Chili

Chili. 1000 ways to make it. Each of them delicious in their own way.

On Sunday I made Chili with Italian Sausage. Hunkaroonie's favorite way.

What you'll need:
1 pound mild italian sausage
1 large yellow onion, diced
2 cans black beans, rinsed and drained
1 can of kidney/chili/red beans (whichever you like best), rinsed and drained
2 cups corn (I used frozen sweet corn)
1 large can crushed tomatos (or whole tomatos and then break them up)
2 large tablespoons tomato paste
1 bottle dark beer (or if you only have light beer, that's OK too)
1 cup beef (or chicken stock)
Cumin
Salt and Pepper

What to do:
Brown the sausage in the pot you plan to make your chili in. Once the sausage is almost browned add alittle EVOO and then throw in the diced onion. Season with Salt and Pepper and let the onions get nice and soft.
Next add the beer and scrape the bottom of the pan to get the brown bits off. Add your tomato paste and let that dissolve. Now add the beans, corn, crushed tomatos, and stock. Let this come to a simmer. Add cumin until it's seasoned how you like it. We like a lot of it. (cumin has a nice smokey flavor but is not hot) Just taste as you go.

Top with a dollop of sour cream, diced scallions, and sharp cheddar cheese. I also served mine with homeade tortilla chips for dipping! But corn chips are fantastic too!

I promise this will warm your belly on a cool night. Or on a Sunday afternoon while watching a football game.
