For the past few weeks we have made these Harvest Pancakes. It's just the perfect thing to do on a cool & crisp Saturday morning. They are hearty, nutty, healthy and the texture is right on.
I found this recipe online but modified it. Feel free to do the same. Or make just as we do. You'll start this as your Saturday morning tradition too. But hurry Fall is almost over. OK, maybe they'll be just as good to make in the winter! Now, let's get started.
Dry ingredients you'll need:
1 cup oatmeal
1 cup whole wheat flour
2 TBSP flax
1 TBSP baking soda
1 1/2 tsp baking powder
1 tsp salt
1/3 cup sugar
5 or 6 dashes of cinnamon
Wet ingredients you'll need:
1 cup buttermilk
1/2 cup sour cream (or if you don't have this add 1/2 cup more buttermilk, I've done that too)
1/4 cup vegetable oil
What to do:
Mix the wet ingredients in a small bowl. Combine the dry ingredients in a separate larger bowl.
Add wet ingredients to dry ingredients and stir just to combine. If you feel the batter is too runny, add more whole wheat flour. You know me and my baking, I just add and subtract as I go. But this is the jist of the amounts!!!!
Heat griddle to 350degrees. Coat with little cooking spray and spoon 1/3 cup batter onto griddle.
These little guys are super hearty aka filling. But make all the batter. They are still super delicious the next morning. Or to eat cold throughout the day as a snack! Promise. Pinky swear.
