Breakfast Recipe: Burritos

I haven't shared a recipe in awhile. It's about time!

Breakfast is one of our favorite meals. But don't get me wrong, I love any time it's meal time! But staying in your pj's with slippers on and smelling the pot of coffee brewing. Nut'n better.

Over the holidays I made breakfast burritos. They were yummy and a perfect way to give you energy for the day.

What you'll need:
Whole Wheat Tortilla shells
10 Eggs (8 eggs whites, 2 with yolks)
1 bag shredded hashbrowns, cooked until nice & crispy
Can of black beans, rinsed & drained
Ground breakfast sausage, cook until nice'n brown then drain
1/2 yellow onion, dice & saute until translucent
Handful of fresh spinach, chopped
Handful of sharp cheddar cheese, shredded

And then for Topping:
Fresh tomato, diced
Fresh cilantro
Avocado, diced
Herdez Salsa Verde
Sour Cream

What to do:
In a large skillet, saute breakfast sausage until nice and brown (then drain). Next add some EVOO and the diced onion and saute until translucent.

In another skillet brown your hashbrowns.

To your sausage & onion pan, add your rinsed black beans and your fresh spinach. Now add your eggs (that you've cracked, combined, & wisked in a separate bowl first). Using your spatula make sure your eggs don't stick to the pan. Season with salt & pepper and then add the cheese.

Take off the burner.

Remove the browned hashbrown from the pan (and just put on a plate so they are ready when you assemble). In the hashbrown pan add a little EVOO and put your tortilla shells (one at a time) in the pan so they get a little color to it and crisp up a bit (but not too much).

Now you're ready to assemble.

Lay your tortilla shell on a plate. Spoon some of the egg/meat/veggie/bean mixture on the tortilla, then a layer of hashbrowns. Roll up and put on the center of the plate. Top with diced tomato, avocado, cilantro, salsa verde and sour cream!
